Tried and True: Pork Loin with Leeks

I found this recipe in Cooking Light magazine years ago.  It’s fabulous.  And easy. Don’t be scared away by leeks, if you’ve never cooked with them.  I hadn’t until I started making this dish.  They are really cool and very easy to work with. I serve this with potatoes and a salad.  Enjoy!
