This recipe is just what the doctor ordered on this cold and blustery March day here in PA. I made a batch of this chili last week and had enough left over to freeze for another whole meal, which is defrosting on my counter this very moment. I can’t wait for dinnertime!
I got this recipe from my friend Bekah.
White Chili
1 Tbsp olive oil
2 medium onions, chopped
4 cloves garlic, minced
1-1/2 tsp oregano
2 tsp cumin
1/4 tsp ground cloves
1/4 tsp red pepper
3 (15-ounce) cans Great Northern Beans, drained
4-6 cups chicken broth
2 pounds chicken, cubed
1 or 2 (4-ounce) cans chopped green chiles
salt and pepper to taste (needs generous salting here)
3 cups shredded Monterey Jack cheese
salsa
sour cream
Sauté onions and garlic in olive oil until soft. Stir in spices; blend. Add beans and chicken broth. Simmer for 30 minutes.
At this point, I add about half the chicken, the chilies, 1 cup of cheese, the salt and the pepper. Then I take a stick blender and purée it up a bit.
Then I add the remaining chicken. This way, some of the chicken is puréed into the soup, and you still have some hearty chunks to chew. I’m not a fan of completely puréed soup, but feel free to alter this to suit your own preferences.
Stir and serve! Garnish with remaining cheese, the salsa and sour cream. Put a big hearty dollop of each right in the middle of your soup! And serve with corn tortilla chips or, my personal favorite, corn muffins on the side. YUM!!!

This sounds very similar to a White Chicken Chili I make – except I use chili pepper (probably in place of the red pepper) and I don’t mix the cheese in…we add it afterwards. I recently made this and froze it myself! We had some two nights ago. YUM!
I’m going to give this recipe a try this coming week…I’ve been trying different ones and I haven’t found what I’m looking for yet…I think that’s a song! lol!! Anywhoo…this sounds good! thanks!
