This is the simplest, easiest gourmet meal you’re ever gonna make.
Pan-Roasted Pork Loin With Leeks
4 large leeks
1/2 cup water
1 Tbsp butter, divided
1/2 tsp salt, divided
1/2 tsp black pepper, divided
1 (2-pound) boneless pork loin, trimmed
1/2 cup dry white wine (Pinot Grigio recommended)
chopped fresh parsley (optional)
1. Remove roots and tough upper leaves from leeks. Cut each leek in half length-wise. Cut each half crosswise into 1/2-inch-thick slices (about 6 cups). Soak in cold water to loosen dirt.
2. Put sliced leek, 1/2 cup water, 1 tsp butter, 1/4 tsp salt, and 1/4 tsp pepper in large Dutch oven. Place over medium-high heat. Cook for 10 minutes or until leeks have wilted. Pour the leeks into a bowl. Reserve.
3. Heat 2 tsp butter in pan over medium-high heat. Add the pork and cook for 5 minutes, browning on all sides. Add 1/4 tsp salt, 1/4 tsp pepper, and wine; cook for 15 seconds, scraping pan to loosen browned bits. Return sliced leek to pan. Cover; reduce heat and simmer 2 hours or until pork is tender. Remove pork from pan. Increase heat to reduce leek sauce if too watery. Cut pork into 1/4-inch slices. Serve with leek mixture. Garnish with parsley.
Meanwhile, roast colorful “new potatoes” and Brussels sprouts in oil and salt and pepper. Serve with pork.

I’m looking at the picture and saying to myself as I read the recipe, “Those aren’t leeks, those are Brussels sprouts!” Then I got to the end of the recipe. oops. So much for reading thoroughly before asking questions.
I wonder if I could make this somehow with chicken since we don’t eat pork? hmmmm…..does look good.

My kids will choke a few down. I don’t often cook with leeks, so we’ll see how this goes.
I love pork loin because you can slice the little medallions and not pig out on too much meat (ha! bad pun I guess).
