This is one of my best dinners in a pinch. You do have to plan ahead, but it’s great for those days that you don’t have a lot of time to cook but want a home-cooked meal.
I buy a boneless pork loin when it’s on sale. I cut it into manageable pieces and freeze them so I always have one on hand when I want it. Then, the morning you want pork sandwiches for dinner, just place the pork loin in the sink with cold water for a few hours to thaw.
At lunchtime, slice an onion (if desired) and place in the bottom of a crockpot. Then place the pork loin on top, fat side up. Salt and pepper all sides of the pork. Put the lid on and cook on high for 4-5 hours. (You can start it in the morning if you’re going to be gone all day, just heat it on low, and you will want to defrost it the night before.)
About an hour before serving, gently pull apart the pork with two forks, shredding it until it looks right. You can remove the onion or mix it in. I mix it in.
Then squirt the desired amount of your favorite barbecue sauce onto the pork and mix well. I use KC Masterpiece®. I don’t use a whole lot of sauce, just enough to give it some flavor. My kids prefer it that way. I usually serve more sauce on the side for those who desire a stronger flavor. "Those" being my husband.
Put the lid back on and keep warm until ready to serve. Pile pork on fresh kaiser rolls and top with a thick slice of Provolone cheese. Serve with potato chips and a side salad or fresh sliced veggies. YUM!

























Wow, this sounds amazing. With me being gone during the majority of the day, I am always looking for meals that are quick and easy (but still homemade). Crock pot meals are always winners, and this one sounds like it could soon become a favorite!

YUM!! I have an awesome coffee rub for pork that I use when making barbecue. I usually cook a whole loin or roast at a time, but I’ve never thought about cutting it in daily portions. Great idea!

When I cook a pork roast in my CP I add about 2T soy sauce along with the onion and it simmers into mouth watering goodness.
My hubby makes these. I heart them.
Jennifer – Yes, I divide the raw loin into 2 or 3 pounds portions, then I put one whole roast into the crockpot. Then I shred it after it’s cooked to death.
It should shred easily, although I made it today and it was hard to tear apart. I don’t know if I didn’t cook it as long as usual or if it was just a tough piece of meat. It tasted okay and was chewable
Dee-lish~ wow, these look fabulous! I’m so not a cook so forgive my question. But are you putting the whole pork roast in the crock pot before chopping? I’m trying to learn, that’s why I asked for my own Racheal Ray cookware set! LOL
Mmmm. Love the idea of the onion and soy sauce. I’ve done this with 4 whole cloves in the bottom of the crockpot, pork on top, and let her cook. Remove the cloves before shredding the meat and then add BBQ sauce.
I do something similar but add a few shakes of Liquid Smoke to, you know, give that smoky mesquite flavor.
