It is an ancient grain and I LOVE the buttery taste it gives.  It is not as strong as Hard Red Wheat. (On my to-do list for the weekend to try another batch. I used one packet of their SteviPlus powder (with added inulin fiber) to replace the sugar, and about 1T of their liquid vanilla creme flavored stevia in place of vanilla( which also added more sweetness), and it was great!  There are a lot of recipes using stevia out there.

I&#039;ve been using Stevia for a little while and to answer the substitution question...DO NOT substitute Stevia on a 1:1 ratio for sugar as it&#039;s about 300 times sweeter than sugar.  If you google Stevia, it will give you all kinds of info on what to do with it.  I also bought &quot;The Stevia Cookbook&quot; at my local health food store and it&#039;s great.  My daughter would chug Agave Nectar all day if I let her and I can&#039;t say I blame her...it&#039;s good!  I tried my hand at making cookies with honey but let&#039;s just say they didn&#039;t work out.  I was able to scrape it all together once it was cooked and make a &quot;crumbly&quot; type topping for yogurt from it.  I&#039;ve been googling Agave Nectar recipes, etc. and I&#039;ve found wonderful sites from doing that.  As for the chips, I tried to make homemade baked potato chips but I just burned them and tried to call them cajun flavor...didn&#039;t work but I will perservere!  I&#039;ve been trying make from scratch alot of the stuff we used to buy like Poptarts, Toaster Strudels, and cookies.  I also have been really pushing the fruit.
