Tastemaker Challenge #2

It’s been a long time in coming, but I FINALLY completed my second Tastemaker challenge – Nutrition on a Budget.  It’s a little late.  This was, um, November’s challenge, you may recall.  *blushes*

So anyway.  I kept waiting and waiting for an evening where both my husband and I were free to work on this together (usually he sets up proper lighting and puts a mike on me and works video camera and all that jazz.)  But that evening just didn’t come so I finally set up my Flip video cam on a tripod one afternoon last week while my daughter was napping and the older kids were at school, and I just banged it out.  And that explains both the poor quality as well as the reason that my husband didn’t put his familiar Handyguys Production label at the end. What can I say.  Sometimes you just gotta throw caution to the wind.

This month we received a box with $10, a potato ricer, and a digital food scale.  SWEET!  Our assignment was to create a meal for less than $10, using potatoes, that was also nutritious.  I immediately thought of soup, and it occurred to me that a broccoli cheddar soup with a  potato base would be delicious and healthy, so I found a recipe online and tweaked it a bit.

Without further ado, here is Broccoli Potato Cheddar Soup, Tastemaker style!  (Don’t forget to give it a ranking when you’re done watching!!)

Yummo! Did you know that you can skip the peeling if you use a ricer. The skin gets separated, just like magic!

I made this soup, more or less, for my husband tonight! He’s been craving broccoli cheddar soup, and adding potatoes makes it more frugal (besides, he loves potatoes). I left out the chicken stock, though. I didn’t have any homemade, and lately I’ve been leaving it out of a lot of vegetable soups that call for it and not really missing it. I’m sure the health value is good, but sometimes you want something that DOESN’T taste like chicken for a change. (I make a LOT of soup, and I try to make them as different as possible because I like variety.)

I didn’t watch the video again while making the soup, so I’m not sure what else I did that wasn’t like yours. I just threw in potatoes, broccoli, milk, and cheese sort of in random amounts, and seasoned to taste. It was DELISH!
