Tried and True: Chicken Enchiladas

This recipe is from a friend, and I’ve been making it for about 10 years now.  I know I have several enchilada recipes recorded on the blog, but I searched and didn’t find this one.  I think it’s because I took a break for a few years and made this one (which is also good, but it uses Ro-Tel and Cream of Chemical soup, so if that bothers you, as it does me, then you may like the one I’m about to post better.)

My kids prefer the one I’m about to post because there are no onions, so I’ve been making it quite often lately because I’m always looking for meals I can make with cooked chicken.  My only caveat is regarding the tortillas.  I have yet to add homemade tortillas to my repertoire, and I really have no desire to do so.  I usually get tortillas at Trader Joes, but I was at the regular grocery store, and I picked these up without reading the label.  YIKES STRIPES, these babies are about as far from “real food” as you can get.  I also wish I could find Colby Jack cheese without food coloring.  But then no one ever said this was a perfect world, now, did they?

So with all those disclaimers aside, this is how I make them.  It’s so easy I don’t even use a recipe anymore, and that’s gotta be easy.

First, you gather your ingredients:

Cooked chicken meat, heavy whipping cream, salsa, flour tortillas, and colby jack cheese.

I mean seriously.  How easy is that?

Next, you chop or shred the chicken.

Then you toss it in a bowl and pour salsa over it — whatever looks about right.

And give it a stir.

Then you pour some cream onto a plate and tip a tortilla in the cream on both sides.

And then you place a spoonful of the chicken/salsa mixture down the middle like this.

And roll it up and put it in a greased 13×9 pan.  Do the same with the other tortillas.  I usually make 7 or 8.

Next, you need to shred the cheese.

And spread it on top of the enchiladas and drizzle with cream.

Bake at 350 degrees for about 30 minutes or until they look done.  Like this:

Serve it with a side salad, and you’ve got yourself a meal!

I love this recipe. We use it all the time! Mine just calls for the cream to be poured over them. Might have to try dipping them first! YUM!!!

This looks so good, I will have to try it. It’s funny you posted about making your own tortillas because I’m trying it for the first time tonight! Should be interesting. I’ll let you know how they turn out…IF they turn out!

I love enchiladas but I can’t ever make them. By the time they come out, I have more of a casserole.

That looks great, and I would NEVER have imagined whipping cream with enchiladas! Thanks. I’ve had the same issue with tortillas — we use them a lot, but I don’t like all the chemicals. We even bought a tortillas press, and tried to make them at home, but they failed. Keep me posted on what you determine on this one.

I love enchiladas, but I still don’t have a “go to” recipe. I’m definitely going to try yours. I just made homemade tortillas for the first time last week (and blogged about it). It was so easy that my 2 year old did most of the work. And they tasted delicious!! :)

Ok–this doesn’t look too much different from what I’m used to, except it’s missing the green chile. Then I realized I live in New Mexico, home of green chile. :D If you want a tried and true and easy-peezy homemade tortilla recipe, let me know. I have to make my own tortillas so I finally found a great one! :D

I just made an enchillada cassarole last week and wrote something similar about not liking the use of cream of XXX. Great minds think alike! I used ground beef & black beans in mine, but my friend made it with chicken for her family the next day. Here it is if you’d like to swap, I’ll for sure be trying yours!

Mmmmm. I feel like chicken tonight! We may be having this tonight, depending on how long my little one naps this afternoon and if I can get to the store. My mom’s recipe is sort of similar but not quite as easy. And I am all about the easy.

But why? It’s not as bad for you as the USDA would have you think. ;-) Just make sure it’s from a good source (not ultra pasteurized – ew.)

AHHHHHHHH… Wow, it bothers you that much? I ask b/c I am also lactose intolerant but I can handle dairy cooked in things. Just not a glass of milk. HOWEVER. I can drink raw milk b/c heating the milk alters the lactase, changes it to lactose, and that’s why people can’t tolerate pasteurized milk. Have you ever tried raw?

Any-WHO. As far as the cream in this recipe, I has a friend who uses jarred enchilada sauce to dip the tortillas in (although I do think she adds the cream on top) but perhaps you could try that and then eliminate the cream?

These look really good, I’m going to have to try them soon. Being married to a Mexican we are pretty picky about our tortillas and Trader Joe’s are by far the most realistic and tasty out there. We buy quite a few, too many really.

ANYHOO – food coloring free cheese: try http://www.hillacrespride.com in Peach Bottom, PA (they also do several weekend farmers markets in the area, and sell at Whole Foods). Their Coldby is awesome.
