I hope everyone had a lovely, relaxing Father’s Day. After church we feasted on grilled chicken, fresh sweet corn and homegrown green beans. And by homegrown, I mean grown on the farm a couple miles away. Hopefully next year we will have a garden in our backyard, but for now I’m just happy to have a farm market so close by. Then we topped off our meal with hefty slices of blueberry pie smothered in homemade vanilla ice cream.
I made the pie with fresh Jersey blueberries and a butter and beef tallow crust. This was my first time working with beef tallow; I just ordered some through U.S. Wellness Meats (yeah, I prefer to buy local, but the only source of beef tallow I’ve found around here is an hour away and I haven’t had a chance to get there yet.) The dough was hard to work with, but with a little bit of patience and a few well-place swear words, I managed to get it to hold together. I wish I’d thought to take a picture. Oh well, next time. If my husband has anything to say about it, there WILL be a next time.
And that brings us to ….

So for this week, here’s what I’m thinking:
MONDAY: sausage kabobs, quinoa, sauteed spinach
TUESDAY: leftover tacos from last week (I doubled the meat recipe so I’d have 2 meals out of it. Yay for efficiency!)
WEDNESDAY: Parmesan Chicken, steamed green beans
THURSDAY: Shrimp Étouffée, collard greens
FRIDAY: burgers on the grill, brussels sprouts with caramelized onion and bacon
SATURDAY: Tuscan Lemon Chicken, corn on the cob, steamed green beans
SUNDAY: leftovers

I think I’m salivating.
Looks absolutely fab, and yeah I may be biased since you’ve got my etouffee on there. My husband took some to a coworker of his from LA (the state, not the city) and it was well received. I had begged him not to take it to him, the guy is an ex-chef, so I found the idea intimidating as can be.
