
Last night I made salmon quesadillas for dinner.
I had this recipe sitting around, and I’ve had all the ingredients in my pantry for a while. But last night I noticed a couple of pieces of Asian grilled salmon rotting in the back of my fridge (left over from a dinner last week.)
Waste not, want not!
I hated for them to go to waste, so instead of using canned salmon as the recipe calls for, I pulled out my flour tortillas (some day I’m going to try to make my own tortillas; I hear it isn’t hard, but I haven’t felt up to the task just yet) and shredded some Jack cheese (I didn’t have mozzarella on hand, and I generally prefer a stronger cheese anyway) and broke up my leftover salmon into a bowl.
Then I just buttered the tortillas as the recipe directed, layered cheese, salmon, and more cheese, topped the whole mess with another buttered tortilla, cooked and flipped.

They were delicious. While I was assembling them, I put out a plate of raw red pepper and carrot slices for the kids to munch on it and called it a well balanced meal.
Of course I didn’t take any pictures so I pilfered one from the Taste of Home website. Mine weren’t presented nearly so prettily, but they sure did taste good.

It’s a tough job, but someone’s gotta do it.
We tried three or four different combinations of ingredients (I lost count, I wonder why . . . ) and finally came up with the winner. I’ll be sure to send you the link to the recipe when it’s live.

























Oh, J-L, if you figure out how to make tortillas at home, PLEASE do a post and let us know! Last fall, when I started all this good-food business, I bought a tortilla press and a bag of whatever that corn flour stuff you need, and Adam (not I!!) tried it a couple of times. They did not turn out. They stuck in the press, and he couldn’t get them out. If he made the dough drier, they didn’t work either. Those Mexican masters must have a special touch. I think he even tried it with plastic wrap, as advised, but no go. help!!
Yeah, that’s exactly what I’m envisioning. I have had several people tell me how easy they are. Hmmmm…

We love salmon. We love quesadillas. Can’t say that I love the idea of them together.
I often do raw veggies for the kids. They prefer them, and they’re healthy. Why not?
Mexican is the BEST way to get rid of leftover meat and veggies. It’s a favorite in our house! I’ll have to try the Salmon. I’m hoping that once we move, I can start cooking fish more often…

Can’t wait to try those quesadillas next week! I’m trying to get better about planning our meals for the week and only shopping on Mondays. (Meaning, I’ve done it this week and this week alone, and tonight we’re having left-overs.)
