Tried and True: Emeril’s Broccoli Cheese Soup

There are three qualities I like in a meal: easy, nutritious, tasty. I especially like it if it disguises vegetables in such a way that I don’t feel like I’m eating vegetables. I’ve had this Broccoli and Cheese Soup recipe in my recipe binder for ages, but I don’t think I ever made it until last night. I’d tried a few variations on broccoli cheese soup, and while they were often tasty, they didn’t come together real well. I suspect the secret to this one is in the roux. I knew Emeril wouldn’t let me down.

It starts by sauteing onions or leeks (I used leeks) in butter.

Then you add garlic and thyme and {gluten-free all purpose} flour. (I omitted the nutmeg. I’m of the opinion that nutmeg belongs in eggnog and ONLY in eggnog.)

To that, you add chicken stock. The flour thickens the stock and makes a nice rich broth.

After that thickens, you add broccoli.

My immersion blender wasn’t cooperating so I put it all in the blender and gave it a whirl.

Then  added the heavy cream and finally the cheddar cheese.

I used sharp cheddar, and I really tasted the tang. It was magnificent.

You end up with THIS.

I’m telling ya, Panera has NOTHING on this stuff.

My family raved about it. With a slice of homemade whole wheat bread, this was a nice cozy winter meal. The soup alone would be a fabulous appetizer for company.

      I used more broccoli than it called for too – I used two 10-oz bags. That should increase the iron content.

    need to make it gluten free, I wonder if the hevy cream is enough to thicken to soup without the addition of flour?
