Tried and True: Fall Quinoa Pilaf

I was introduced to this dish at a cooking class I attended last month. I would never pick this out of a recipe box to make, but once I tasted it, I knew it would become one of my regulars. It’s perfect for a light dinner or a hearty side dish, and leftovers make a wonderful lunch.

    Ok, and I have to tell you, I made the broccoli soup last week which was really good. The only thing was my 8 year old HATED it (he ate it though) until he realized it gave him ATOMIC horrible gas, and then he wanted to eat it every day. ha!

  6. I actually bought quinoa back when my daughetr was allergic to wheat/gluten, but NEVER made anything out of it. This is a great recipe to finally try to cook with it :)

  7. I bought quinoa at the grocery store today because I had seen 2 yummy looking recipes on blogs recently and really wanted to try it (plus I had heard about the health benefits).

    So I made your recipe tonight. :) And it was DE-licious! In fact, I’m still savoring the smell in the house and it’s been hours later. I added a splash of zucchini cubes and extra olive oil. And I used a red onion instead of a yellow one. I will be making it again very soon. My only complaint is the mess. I found quinoa in my 14 month old’s diaper. It’s like couscous…very messy. But then again, my dining room looks like a tornado after every meal in my house!

    Just finished eating this for dinner. YUM!! I added a dash of cinnamon which complimented the flavors nicely. I ate it as is and the husband stirred in some chicken-apple sausage.

    I usually make quinoa with salsa and black beans, which is hard to beat, but this is a great fall recipe. Thanks!

    Great recipe! I am sure I can add more to it …maybe squash or zucchini. I did use my rice cooker for the quinoa,so..no mess for me. Instead of olive oil I used some ghee.

    Really great recipe. Love that it is completely gluten-free. My daughter is gluten-free and it is nice to make something for the whole family. Thanks for a great recipe. Would like to see more gluten free
