Menu Plan Monday

HOW did it get to be Monday again?

And how annoying am I, starting every single Menu Plan Monday post with a variation of that first sentence?

Last week I disparaged that we were down to bare bones in our freezer. (Ha. That’s actually a literal statement — I think all that is left, besides cow tongue and liver, is bones for making beef stock. Oh, and one lone pot roast. I guess that makes one night’s menu plan a gimme.)

I picked up a small order from Your Family Cow on Thursday, so I now have a chicken, a pack of chicken breasts, and 2 lbs of ground beef to add to my pot roast dinner. At least menu planning will be pretty straight forward this week. (By the way, Your Family Cow has drop points all over our area, if you’re interested.)

As an aside, I am beginning to miss pork. I need to find a good source for that.

So without further ado . . .

Menu Plan Monday

MONDAY: Shaved Parmesan Chicken & Lemon Creme and a fresh veggie (whatever I find at the market)

TUESDAY: Shepherd’s Pie

WEDNESDAY: Salmon Cakes with a side of rice and a veggie (photo credit: Food Network)

THURSDAY: EVENT! (Chicken Noodle Soup for the fam) NOTE: When I want to make it gluten-free, I use rice instead of noodles.

FRIDAY: Pot Roast

WEEKEND: leftovers, take out, or what-have-you

  1. Have you tried Tinkyada brown rice pasta? It’s still grain, yes, but a nice gluten-free option if you (or your family) really want pasta. I’ve tried quite a few rice pastas, but there’s is undoubtedly the best.

  3. I live in Northeastern Pennsylvania, and I get my pastured pork (and other meats) from 8′oclock Ranch. I kid you not, their pork is amazing. Even my hubby, who doesn’t like pork, loves this pork. http://www.eightoclockranch.com/

      Looks WONDERFUL! Too bad it’s so far from me.

      • They deliver! They fed-exed to me, no extra charge. It arrived still nicely frozen. Honestly, it’s so good!! I promise, I am only a customer and don’t work for them, nor get any fees. I am just really pleased to finally find something “local” enough to me they were able to overnight it. And they have more than pork, too. I got the mixed box and everything is just wonderful so far. I just got my first order late last month.

  4. Haven’t yet tried this myself but I plan to. Saw this recipe for salmon cakes using potato flakes instead of bread crumbs. I’m getting to where I don’t care for “breaded” much anymore so would love to sub something in place of them.

    Thank you for reminding me that I need to get the chicken out of the freezer. I meant to do that yesterday but didn’t so I guess we’ll be foraging tonight.

    And when you say market what kind of market are you referring to? Just curious.

      There’s a small, local whole foods market that I frequent. :-)

      • Nice. It just sounds so fun to say you’re going to the market. It conjures up images of beautiful produce and happy people filling pretty baskets. There should probably be a cow around somewhere to complete the image. Or not.

          LOL. The way you make it sound, it is lovely! This is just a small grocery store that caters to crunchy people, lol. Now cows or pretty baskets. ;-)
