Best Guacamole Ever

Many moons ago a good friend introduced me to this delectable guacamole recipe. It was the start of a beautiful but rocky relationship.

We were the best of friends until one fateful night when I overindulged in this delectable treat and made my tummy very unhappy. This unfortunate incident was the first of many such encounters.

After many years apart, we reunited over the past weekend. It tasted as wonderful as I remembered, but my delight was short lived. A familiar altercation ensued, and I have once again kicked my dear old friend guacamole to the curb under circumstances too painful to recount. I have come to the conclusion that we simply cannot live in harmony, no matter how much I wish it to be so.

Before we parted, however, I took this snapshot. I decided that just because we can’t be friends, it doesn’t mean that I can’t share this culinary delight with the rest of you. Perhaps you will have a more peaceable encounter.

Best Guacamole Ever

Ingredients:

  • 1/2 red onion, small diced
  • 1 handfull grape tomatoes, quartered
  • 1 handfull chopped fresh cilantro
  • juice of half a lime (or more to taste)
  • 1/2 tsp sea salt (or more to taste)
  • 2 ripe avocados, mashed

Instructions:

  1. Mix and serve with non-GM corn chips.
  2. Dip. Eat. Repeat.

  1. I love guac! So sorry it gives you tummy troubles.

    And yes, do not over do it on the salt. One time I made guac and got a little heavy handed with the salt and my family started calling it saltomole. That was almost three years ago. Every time I make guac they call it that! Every. Time.

  6. Adding diced jalapeno (too taste) is good also…mild ones for the kiddos, of course.

  7. That looks delightful! I love the addition of the tomatoes and onion – ymmmm. Sorry it doesn’t sit well with you, but so glad you shared.

    And you also mentioned non-GM corn chips. Have you seen chips that are labeled as non-GM? I’ve never noticed it. Can you tell us specific brands to look for?

      Yes, organic products must be non-GM as far as I know. I usually buy the Bearitos brand (I also buy their taco shells) or the Garden of Eatin’ brand – love their black corn chips. But even organic Tostitos SHOULD be non-GMO.
