{Gluten Free} Meal Plan 5.16.11

This has been a whirlwind of a weekend, and I really want to write about it, but that will have to wait. Duty calls.

Anyone want to work the elementary school book fair for me today so I can stay home and get caught up on blogging and design?? Anyone?? K’thanksalot.

In the meantime, my family has to eat so I’m going to throw together a menu plan real quick. And since I’m always looking for new ideas, I thought I’d also add a linky at the bottom in case anyone else has a gluten free menu plan or dinner recipe they’d like to share.

MONDAY: Chicken Chili and a salad – I bought fresh, local, organic arugula at my whole foods mart and I can’t wait to dive in.

TUESDAY: Triple Threat Meatloaf with roasted broccoli and quinoa cooked in chicken stock.

WEDNESDAY: Leftover chicken chili — I’m going out and need something quick and easy.

THURSDAY: Grilled Citrus-Rosemary Salmon with Herbed New Potatoes and roasted locally grown asparagus.

FRIDAY: Pan-Roasted Pork Loin With Leeks with rice and sauteed swiss chard.

SATURDAY: Crustless Chard Quiche and a salad — chard is local and plentiful now, and I’m always looking for new ways to use it.
