Weekly Meal Plan 02.27.12

After spending five days in Nashville at the Blissdom Conference, I’m in recovery mode today. But I know that if I don’t intentionally make a meal plan for the week, I will live to regret it. Fortunately I stopped at the grocery store on the way home from the airport yesterday and bought enough to get us through tonight. Here’s what’s on the docket for the rest of the week!

MONDAY: Tilapia Parmesan (substituting Monkfish) with rice and sautéed swiss chard

TUESDAY: Herbed Chicken Rosé with mashed potatoes and roasted broccoli

WEDNESDAY: Crustless Quiche with a side salad

THURSDAY: Triple Threat Meatloaf with baked potatoes and a green veggie

FRIDAY: Turkey and White Bean Chili (it’s a lot of work, but it is delicious and it makes a lot of leftovers)

    JoLynne, how do you roast your broccoli? Do you drizzle with olive oil, salt, & pepper, or just pop it in the oven “naked”? I feel silly asking about such a simple thing, but I’ve never heard of preparing broccoli this way and am going to try it. Thanks for your help!
