{Gluten Free} Weekly Meal Plan 05.28.12 *with Linky*

Gluten Free Meal Plan via Musings of a Housewife

Happy Memorial Day!

I hope everyone is getting a day to veg and enjoy your family. And please don’t forget those families who have lost loved ones in our nation’s service. It’s so easy to get caught up in picnics and parades and forget the reason we are getting a day off.

Here’s what we’re planning to eat this week:

MONDAY: ribs, corn on the cob and sautéed spinach (I bought pre-marinated ribs at the farmer’s market, but you can check out Lydia’s Braised Country Style Pork Ribs if you want a recipe to inspire you.)

TUESDAY: rosemary baked chicken thighs with beet & goat cheese salad (my kids love this, believe it or not!!)

WEDNESDAY: Crustless Chard Quiche with a strawberry salad (recipe to come)

THURSDAY: beef brisket with mashed potatoes and a fresh veggie (waiting to see what we get from the CSA this week!)

FRIDAY: Linguine with Shrimp Scampi and a side salad

SATURDAY: leftovers

Have you checked out the Udi’s Gluten Free Community lately? There are tons of great gluten free recipes, advice on going gluten free, and conversations about all areas of gluten free living. If you’re living gluten free, or considering giving the lifestyle a try, check it out.

Also, check out my Resources page for all my favorite kitchen tools and products.

I know it’s a holiday, but I hope some of you will link up your gluten free recipes or menu plans!

Yum! I tried your brisket recipe once and really liked how it turned out. I think it used it for tacos or something similar. Unfortunately, I haven’t been able to get a brisket since b/c the farm I purchased from at our farmer’s market had to close. I need to find a new farm this year!
