MONDAY: Crustless Chard Quiche with a side salad

TUESDAY: Chicken In A Pot, roasted carrots, rice and Tomatoes, Mozzarella and Basil Salad

WEDNESDAY: Turkey Goat Cheese Lasagna (Gluten-Free Optional), salad and rolls for the non-gluten-free among us

THURSDAY: Baked Salmon, rice and Beet & Goat Cheese Salad

FRIDAY: Mexican Lettuce Wraps

SATURDAY: Pulled Pork Sandwiches with fresh veggies on the side

  1. Since this is the last week of summer for us, we’re trying some more gluten-free recipes at lunchtime with the kids, plus a recipe from Make It Paleo Friday night. Usually I do pizza or calzones on Friday night, but I’m out of ricotta and mozzarella.
