MONDAY: Baked Salmon, turnip greens and quinoa cooked in chicken stock

TUESDAY: Zucchini Pasta with Bacon & Mushroom Cream Sauce and Against the Grain dinner rolls

WEDNESDAY: Company Pot Roast

THURSDAY: Fall Quinoa Pilaf and a side salad

FRIDAY: Friday Night Chili with corn muffins (trying a GF version this week! will let you know how it goes)

SATURDAY: Herbed Chicken Rosé with sautéed swiss chard and baked new potatoes

  3. We love zucchini pasta that way, too! I do a dairy free alfredo sauce that’s similar, but I’m also loving it with garlic, tomatoes and mushrooms in a lighter sauce right now, too.
