{Gluten Free} Weekly Meal Plan 10.22.12

This is a short week for us because we are heading to Disney World!!! To say we are excited would be a huge understatement. (And by we, I mean the kids. My husband and I are just hoping to stay sane through it all.)

For that reason, I won’t be posting a menu plan next week. But I will post a full week of meals today so this post is complete. My OCD just wouldn’t be able to handle it any other way! Plus this may give us some inspiration for the week we return, although I have a feeling re-entry is going to be a beast. We might be doing take out for a while!

MONDAY: Stuffed Shells with @RoseRomanos Italian Peppers

(The recipe will be in the next issue of Rose Romano’s email newsletter, which is going out on Wednesday .) I’m actually making this so I can take photos for the newsletter. I’ll be using Tinkyada Brown Rice Pasta Grand Shells to keep this dish gluten free!

TUESDAY: Gourmet Hamburgers with @UdisGlutenFree buns and Roasted Brussels Sprouts with Bacon and Caramelized Onions

WEDNESDAY: Oregano Chicken with Beet and Goat Cheese Salad

THURSDAY: We’ll be dining with The Mouse, but may I suggest Philly Sausage & Peppers with a side salad?

FRIDAY: How about Pan Roasted Pork Loin with Leeks and Zucchini Cakes? This is another good one that doesn’t get much air time. I don’t know why; it is so easy!

SATURDAY: Probably a good day for soup. Try Emeril’s Turkey White Bean Chili!

  4. Have a wonderful trip! I went to Disneyland over spring break and nearly went crazy with all the people, but this should be a great time to go to Disney world!
