I have no idea where I found this hamburger soup recipe. I’ve googled and googled to no avail. So if it is yours, please speak up and I’ll link back to you!!
This hamburger soup is a family favorite. It’s a bit like chili, but without the beans, and not as spicy. It’s nutritious, easy to prepare, and the kids love it.
You start by sautéing chopped onions and ground beef in a couple tablespoons of beef tallow (or lard or olive oil or whatever oil you have on hand).
While that’s getting all happy, you dice carrots, turnip and celeriac. The first few times I made this, I used carrots and celery, but this fall I’m getting tons of turnips and celeriac from my CSA so I’m able to make the recipe as it is written.
Just slice, dice or chop… whatever you prefer.
Add that to the ground beef and saute for a few minutes.
Then add beef broth and tomato paste and bring to a boil. I like this organic beef broth by Pacific Natural Foods, and I always buy my tomatoes in a glass jar to avoid BPA.
The broth adds a nice base for the soup, and the tomato paste adds a richness that enhances the beef and veggies. Add to that some seasonings — salt and pepper, oregano, thyme, parsley and some garlic if you have it. Garlic powder works fine too.
Bring it to a boil, then cover it and simmer on low for about 30 minutes until it’s nice and thick and all the flavors are combined nicely. Garnish with chopped fresh parsley.
It’s also nice with shaved parmesan if you do dairy.

- 2 lbs ground beef (grass-fed is best)
- 1 large onion, diced
- 1 cup sliced carrots
- 1 cup diced turnip
- 1 cup chopped celeriac
- 2 32-oz boxes beef broth
- 1 7-oz jar tomato paste
- 1-2 tsp salt (to taste)
- 3 garlic cloves, minced
- 1 tsp each: oregano, thyme, parsley
- Melt 2 Tbsp beef tallow, lard or olive oil in large stock pot.
- Saute the onions and ground beef over medium heat.
- Add chopped vegetables and saute for a few more minutes.
- Add the broth and tomato paste, bring to a boil.
- Cover, turn heat to low and simmer for 30 minutes or so.
- Add seasonings, and adjust to suite your tastebuds.
- Enjoy with a side salad and gluten free dinner rolls such as Udi's.
