Gluten-Free Chocolate Chip Cookies

I a SO SO SO excited about this! I don’t do a lot of gluten free baking. Frankly, it’s just not worth it. Most recipes aren’t that good, and the ingredients are expensive, and it takes several kinds of flour and xantham gum and the kitchen sink to come anywhere near replicating the taste and consistency of a typical glutenous baked good.

BUT.

Last weekend I was at a friend’s house, and she had a plate of chocolate chip cookies sitting out that she proclaimed were gluten free AND delicious.

She is NOT gluten free, so for her to claim their deliciousness was promising, but I was doubtful.

But tasting is believing, and I am here to tell you, no one would guess these cookies are gluten free! They were DELICIOUS. And best of all, they do NOT require expensive flours and special ingredients. In fact, they contain no flour AT ALL. She got the recipe off a shipping box from Vitacost. There are only six ingredients, and the only one that you might not have in the house is almond butter.

Since my son is allergic to tree nuts, we don’t keep almond butter around the house; in fact, I have never bought it or used it or tasted it until now. But it is the secret to getting the proper consistency for these gluten free chocolate chip cookies without flour.

All you do is mix the ingredients together (save out the chocolate chips to fold in after the other ingredients are blended) and plop them on a cookie sheet.

Make them small; they spread out A LOT.

Then bake them at 350 for about 12 minutes!

I am SO excited. I am definitely going to be making these gluten free chocolate chip cookies for Christmas this year! Finally, cookies I can eat at holiday gatherings!

BEST EVER Gluten Free Chocolate Chip Cookies

Ingredients:

  • 1 cup almond butter organic
  • 3/4 sugar
  • 1 large egg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 oz chocolate chips

Instructions:

  1. Heat oven to 350 degrees.
  2. Mix first five ingredients together.
  3. Fold in chocolate chips.
  4. Spoon cookies onto parchment-lined baking sheet.
  5. Bake 10-12 minutes.

  2. I have reaaallly been wanting some chocolate chip cookies!! I made some regular ones for the family before the hurricane. ( We always make them during snowstorms and before hurricanes :) ) It took every bit of willpower in me to NOT take a swipe of the dough or eat one of them fresh from the oven! I was so willing to pay the price for just a taste. I didn’t succumb but the craving has remained. I will try them soon!!!! Thank you for posting this.

    I will certainly bake them this weekend, I love almond butter! How many cookies does this recipe make? I’ve been trying GF baking and have a good recipe for GF Blondies and my husband loves them. Trust me he loves his sweet treats so I tried the Blondie recipe on him and didn’t tell him they were GF until after he ate them! It became one of his favorite desserts.

  11. I am SUPER impressed with these cookies. My co-workers couldn’t even tell the difference. I also used Cashew Butter instead of Almond Butter because it’s what I had on hand, and they turned out great!

    I’m wondering if you could use any other “butter” alternative besides almond butter? Would it change the taste you think?

    • I haven’t tried but my son is allergic to almonds so I would love to make it with a different kind of “butter”. Let me know if you have luck with a different one!
