{Gluten Free} Weekly Meal Plan 01.14.13

Last week’s menu planning was a bust. In that, I never took the time to make a grocery list and shop so I ended up piecemealing most of my dinners together at the last minute. AGAIN. So annoyed with myself. It seems like the meal planning is not the challenge for me, it’s actually getting myself organized enough to get to the store and get everything I need so I don’t have to go through that, CRAP! What are we having for dinner!??? moment every day at about 4:30.

Hoping to do better this week. I think I’ll use my meal plan from last week and post what I ended up making last week for this week’s meal plan. How ’bout THAT!? If I can even remember… HA!

MONDAY: Salmon Cakes with brown basmati rice and a side salad

TUESDAY: Shepherd’s Pie with Sautéed Swiss Chard

WEDNESDAY: takeout pizza (the family had pizza; I had leftover shepherd’s pie because I was going out)

THURSDAY: leftover pizza and snacks/cheese & crackers

FRIDAY: Potato, Ham & Spinach Frittata (recipe coming tomorrow!)

SATURDAY: Friday Night Chili with Sweet Cornbread a la Home Ec 101 (we had company for dinner)

  1. That 4:30 Crap-what-are-we-having-for-dinner!!?? moment … that was the story of my life for quite a few years – hahaha!! Ugh. My solution was to hand the cooking over to the hubby, and now I ask HIM what we’re having for dinner. Then he can do the oh-no moment :)

  2. I had to move some of my recipes I wanted to try last week to this week. It happens.

    My big success for last week was making the beef in the crockpot on Friday. I even put it in frozen and had dinner in time for the Friday night basketball craziness!

  4. I have a few meals that I’m pretty sure I’ve carried over three weeks now. Soooo thankful to be back in school finally!
