Weekly Menu Plan 02.23.14

This has become more of a weekly menu suggestion than a weekly meal plan. I seem to be deviating more often than not, although I try to pick out meals that I think I will actually make. How about you? Do you stick to your meal plan like glue, or is it more of a list of dinner possibilities?? Either way, I hope this is helpful to some of you!

I’m trying to keep my meals light and low-carb these days. After all, it will be bathing suit weather before we know it! Hardly seems likely when I look at the snow on the ground, but I hear birds singing outside my office window so I know spring and summer can’t be too far off.

Here’s what I might be making this week. Ha!

MONDAY:  Korean Beef with Bok Choy with Bacon & Onion

TUESDAY: Chicken with Spinach and Mushroom Sauce with rice and steamed broccoli

WEDNESDAY: Salmon Cakes with Sautéed Spinach

THURSDAY: Lydia’s Sausage Kale Soup

FRIDAY: leftovers

SATURDAY: date night!

    FYI: Some sort of spammer is getting on your site lately. We get email notices from your site that they leave followup messages like “great post” but also other posts that seem like very much like spam type offers. I delete them after sending them to spam folder.

      Are you subscribed to some of my comment threads? That would be why you are getting those. I have two spam filters set up for this site and I still have spam getting through. I delete them on the site, but if you’re subscribed to comments, then they are getting emailed to you on those particular posts. I am sorry, there is nothing else I can do, aside from monitoring every comment before it goes through. It is very annoying. :-(

    Hi Jo-Lynne! I have an idea of what I will make for the week, but it’s definitely not carved in stone. More times than not I only make a couple of things I was planning on and change the rest :)
    This week I’m sharing what we have at least once a week, Thyme Pot Roast with carrots. So delicious, then i make soup with the leftovers.

    Your meal plan looks great!
    The difficult part for me with meal planning is that things come up—our schedules change all the time. I’ve been prepping my meals and sometimes cooking them ahead of time to make it easier to just pop in the oven and that helps.

    I almost never have a week that works out perfectly but doing a menu plan helps me stay organized. I feel if I didn’t have a plan no one would eat in my house, anything healthy anyway! LOL
