This week has been kinda nuts, as all weeks in May are for us, with baseball games and all the end of school year activities. I actually created a round up of 26 easy weeknight dinner recipes as a resource to help me get dinner on the table fast on those busy school nights. I’ll be pulling from that list for this week’s meal plan. Also, we are cleaning out our freezer in anticipation of ordering another cow share soon so I’m going to have to finally use all those cuts of meat I’ve been avoiding.

MONDAY: Ham & Egg Hashbrown Casserole

TUESDAY: Braised Short Rib (we have short rib in the freezer from our last cow share) with steamed green beans

WEDNESDAY: Loaded Baked Potato Salad

THURSDAY: Salsa Chicken with side salad

FRIDAY: Slowcooker Mexican Lettuce Wraps

We usually do take out or eat out on Saturday, and Sunday is often a free-for-all — either leftovers or sandwiches or, if we’re lucky, dining out!

    Hi Jo-Lynne! I’m glad you were able to get rid of your boot, but I hope you start feeling better soon!
    How did the ribs turn out? This week I’m sharing Ginger Sesame Dressing which is also a great marinade.

      Hey Sandi, that dressing looks divine.

      I never did get around to making the ribs. With my foot in a boot, I wasn’t going to the store very much and we never bought ribs. I actually forgot about that, or I would have put it back on my rotation again. Maybe i can try it over the weekend. I know my fam would love them.

    My husband was in the boot for over two months–we couldn’t wait to dump it! Hope you’re getting around better soon.

    I added a simple (but delicious) homemade vinaigrette recipe this week, plus I’m giving away a salad shaker to make it really easy!

      Okay, this is eerie. I was JUST thinking about you and how I haven’t heard from you in a while. You had me at “5 minutes” lol… can’t wait to check it out!

        Lol, yes, I’ve been pretty busy with traveling and stuff lately and I sort of dropped off the blogosphere for a bit! I also just published a gluten free pasta cookbook (this weekend, actually!) called Recipes for Unusual Gluten Free Pasta, so that’s been a frantic scrabble to finish and get out on time :) I’ll be around a bit more now, hopefully!
