I’ve been at the beach for the better part of the week, and while I love getting a break from the cooking and cleaning up, I have to admit that it’s nice to be home and cook “real meals” again!

MONDAY: Italian Layered Zucchini via Bizzy Bakes — perfect for using up all that zucchini that comes in from the garden or your CSA!

TUESDAY: Marinated Flank Steak with fresh CSA greens braised in bacon and chicken stock

WEDNESDAY: Rosemary Marinated Beef Kabobs via Paleo Diet Demystified

THURSDAY: Tequila Lime Chicken with Colleen’s Potato Salad with Bacon & Egg and fresh green beans sautéed with scallions

FRIDAY: Egg & Hash Brown Casserole with side salad — sometimes breakfast for dinner just hits the spot! What are you eating this week?
